Growing up, my mother used oil and never flipped her eggs, but this brown butter technique has become our favorite. While it may not be any healthier, the taste is truly unbeatable.

Ingredients

  • 4 tablespoons butter

  • 5 large eggs

  • Salt and pepper to taste

Directions

  • Heat the butter in a skillet over medium heat until it begins to brown around 300 degrees (turns golden and smells nutty).
    Be careful not to let it burn.
  • Crack the eggs directly into the skillet.
  • Season the eggs with salt and pepper.
  • Spoon the hot butter over the tops of the eggs as they cook.
  • Cook until the bottoms are set, then carefully flip the eggs.
  • Continue cooking until they reach your desired doneness.
