Ingredients

  • 2 1/2 cups all-purpose flour

  • 1/2 teaspoon baking powder

  • 1/4 teaspoon salt

  • 8 tablespoons softened butter

  • 1 3/4 cups granulated sugar

  • 2 large eggs

  • 1 1/4 cups milk

  • 2 1/4 teasoiibs vanilla

  • 1 tablespoon chopped candy for each cupcake

  • 2 cups icing of your choice

Directions

  • Preheat oven to 350°F. Line muffin tins with cupcake liners.
  • In a medium bowl, sift together the flour, baking powder, and salt. Set aside.
  • In a large mixing bowl, cream the butter and sugar for about 5 minutes until light and fluffy.
  • Add the eggs, one at a time, mixing well after each addition.
  • Stir the vanilla into the milk.
  • Alternate adding the flour mixture and milk mixture to the batter, beginning and ending with the flour mixture. Mix just until combined.
  • Fill each cupcake liner with about 1/3 cup batter.
  • Add the chopped candy to each cupcake and gently fold it into the batter.
  • Bake for 18-20 minutes, or until a toothpick inserted into the cupcake comes out clean.
  • Allow cupcakes to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
  • Ice the Cupcakes
  • I used store-bought Wilton icing, but you can use the icing of your choice. Tint it with food coloring if desired.
  • Fit a piping bag with an A2 tip. Starting at the outer edge of each cooled cupcake, pipe the icing in a spiral toward the center.
  • Finish with sprinkles or decorations of your choice.
