
This smoked salsa packs a deep, rich flavor thanks to charred tomatoes, caramelized onions, roasted garlic and smoky jalapenos. Its simple rustic and absolutely addictive. Perfect with Tacos, chips, grilled meat or anything that needs that smoky kick.
This recipe started as a blend of our favorite restaurant salsas — inspired by Uncle Julio’s and Pappasito’s sauces — and then we added our own Southern Spoon twist. The real magic happens when it hits the smoker, taking those fresh ingredients to a whole new level of flavor.
Stuff you need:
- Pellet Smoker or Oven, and a blender
- 15 Roma Tomatoes (if you use large tomatoes will only need 6)
- 2 Onion cut into quarters
- 2-4 Whole Jalapenos (can substitue Serano peppers)
- 6 garlic cloves whole
- Olive oil
- 1 t salt
- 1 t pepper
- Juice of one lime
- 1 1/2 t Sugar
- 1T chipotle in adobe sauce
- One bunch of Cilantro
1. Preheat Pellet smoker or oven to 300 degrees
Lightly cover Vegetables with Olive oil and place Onion, Jalapenos, Tomatoes on vegetable grilling pan in smoker and set timer for one hour.
2. After first hour
Add garlic to pan in smoker.
Spin, rotate trays, for an even cook and flip vegetables as needed
3. Cook for one more hour
For a total cook time of 2 hours
4. Remove from Smoker and blend
Add the whole cooked onions, tomatoes, and garlic to the blender. Cut tops off and add two Jalapenos, remove seeds if desired for less heat.
Add salt, pepper, sugar, lime juice, and chipotle sauce. Blend till reaches desired consistency.
5. Finish to Taste
Add cilantro last and lightly blend. Then finally, the fun part, taste and add more cilantro, or any spices to taste.
