HEB Copycat Lemon Blondies

These Lemon Blondies became a family favorite completely by accident! One evening, my mother-in-law randomly shopping for sweets picked up a package of Lemon Blondies while shopping at H-E-B. We tried them and immediately fell in love with their soft, lemony texture, white chocolate chips, and sweet powdered sugar topping.

The only problem was—we wanted more, and we didn’t want to make another trip to H-E-B just to get them! So we headed to the kitchen and started experimenting. Four batches later, we finally got them just right—and we think our homemade version might even be better than the original.

They’re soft and tender in the center, bursting with fresh lemon flavor, dotted with white chocolate chips, and finished with that classic bakery-style snow sugar on top. Now we can make our favorite H-E-B-inspired Lemon Blondies anytime the craving hits!

Ingredients

  • 2 Cups all-purpose flour

  • 2.5 Tablespoons all-purpose flour

  • 3/4 teaspoon baking powder

  • 3 large eggs

  • 1/1/4 Cup granulated sugar

  • 1/4 Cup packed brown sugar

  • 1/2 teaspoon salt

  • 1/2 Cup neutral vegetable oil

  • 4 Tablespoons margarine melted

  • 1 1/2 teaspoons vanilla extract

  • 3/4 teaspoons lemon extract

  • 1 medium lemon juiced

  • 1 whole lemon zested

  • 1/4 cup white chocolate chips chopped

  • 1/4 cup whole white chocolate chips or enough to put on top

  • Non melting powdered sugar/Snow sugar

Directions

  • Preheat oven to 325°F.
  • Whisk together the granulated sugar, brown sugar, oil, and melted margarine until well combined.
  • Add the eggs and whisk until smooth.
  • Stir in the vanilla extract, lemon extract, lemon juice, and lemon zest.
  • Fold in dry ingredients into the wet ingredients
    In a separate bowl, whisk together the flour, baking powder, and salt.
  • Gently fold the dry ingredients into the wet ingredients just until combined.
  • Divide the batter into your prepared 4-inch round pans.
  • Sprinkle the white chocolate chips over the tops, leaving some exposed so they can lightly brown.
  • Bake at 325°F for about 23 minutes, or until the edges are lightly golden and the centers are set but still soft.
  • Allow to cool slightly before removing from the pans.
  • Once cooled slightly , generously dust with non-melting powdered sugar/snow sugar.
