HEB Copycat Lemon Blondies

These Lemon Blondies became a family favorite completely by accident! One evening, my mother-in-law randomly shopping for sweets picked up a package of Lemon Blondies while at H-E-B. We tried them and immediately fell in love with their soft, lemony texture, white chocolate chips, and sweet powdered sugar topping.

The only problem was, we wanted more, and we didn’t want to make another trip to H-E-B just to get them! So we headed to the kitchen and started experimenting. Four batches later, we finally got them just right and we think our homemade version might even be better than the original.

They’re soft and tender in the center, bursting with fresh lemon flavor, dotted with white chocolate chips, and finished with that classic bakery-style snow sugar on top. Now we can make our favorite H-E-B-inspired Lemon Blondies anytime the craving hits!

Inspired by H-E-B’s Lemon Blondies, these soft and moist treats are packed with bright lemon flavor, sweet white chocolate, and a delicate dusting of snow sugar. After a few test batches, we created our own version with a tender, cake like center, lightly golden edges, and cocoa butter white chocolate chips.
