INGREDIENTS

2 Racks Baby Back Pork Ribs

1 Onion

6 Cloves garlic

1/2 Stick of butter

1Tablespoons Pepper

1 Tablespoon Kent Rollins rib rub or Rub of your choice

1 1/2 teaspoons Kosher Salt

2 Limes

Mustard

Apple Juice

Extra Salt and Rib Rub for dusting the Ribs



THE NIGHT BEFORE THE COOK

  1. Coarsely chop one onion
  2. Add 1/2 stick of butter to skillet and onions
  3. Cook on medium heat till soft and translucent
  4. Add Pepper, rib rub, salt and garlic to onions and allow to cook approximately 2 minutes
  5. Remove from heat and puree in blender
  6. Set mixture aside to cool
  7. On back side of the ribs remove membrane
  8. Cut ribs in half
  9. Squeeze one lime to back of ribs
  10. Add small amount of mustard to back of ribs and rub in
  11. Add small amount of puree mixture to back of ribs
  12. Sprinkle with kosher salt evenly to back of ribs
  13. Sprinkle rib rub evenly to back of ribs
  14. Turn ribs over and repeat process. Use more of puree mixture and cover with heavier amount of the rib rub.

Day of Cook

  1. Remove ribs from refrigerator
  2. Preheat smoker to 250 degrees
  3. Place foil pan with water in grill
  4. Arrange ribs with bone side down on grill
  5. After one hour spray ribs with apple juice
  6. Hour 2 move ribs around and spray
  7. Hours 3-5 Continue step 6 checking temperature for even cook
  8. Cook ribs to 195-200 degrees internal temp.
  9. When ribs are done remove and put in foil pan add approximately 1/2 cup apple juice or can use melted butter to bottom of pan
  10. Cover with foil and allow to set for hour

Smoked Baked Beans

INGREDIENTS

3 Cans Baked beans or Pork and Beans

2 Tablespoons brown sugar

1 Tablespoon yellow mustard

1 Tablespoon Worchester sauce

1/4 Cup ketchup

3 Slices Bacon

  1. Empty beans into foil pan
  2. Add mustard, ketchup, brown sugar and worchestershire sauce
  3. Stir till combined
  4. Arrange bacon on top
  5. Place on smoker uncovered for 3 hours
