My husband and I created these Vampire Kiss Cookies while searching for a Halloween treat. They combine buttery, melt-in-your-mouth shortbread with a sweet cherry preserves center and a chocolate kiss on top.

Ingredients

  • 1 cup butter, softened

  • 1/2 cup powdered sugar

  • 1 teaspoon vanilla extract

  • 1 cup all-purpose flour

  • 1/4 teaspoon salt

  • 1/3 cup cherry preserves

  • 24 unwrapped chocolate kisses (dark or milk chocolate), chilled

Directions

  • Unwrap the chocolate kisses and put them in the freezer to chill.
  • In a large mixing bowl, beat the softened butter and powdered sugar until light and creamy.
  • Mix in the vanilla extract until combined.
  • Add the flour and salt. Mix until a soft dough forms and comes together.
  • Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.
  • Using a 2-tablespoon cookie scoop, portion and roll the dough into 24 equal-sized balls. Place them about 2 inches apart on the prepared baking sheets.
  • Using your thumb, press a shallow indentation into the center of each dough ball.
  • Bake for 13 minutes, or until the cookies are set and the edges are just beginning to turn golden.
  • If the indentations puff up during baking, gently press them down again while the cookies are still warm.
  • Let the cookies cool on the baking sheet for 5 minutes.
  • Spoon approximately 1/4 teaspoon cherry preserves into each indentation.
  • Press one chilled chocolate kiss into the center of each cookie.
  • Optional: Place the cookies back in the warm oven to slightly melt the chocolate kisses.
